Bricklayers or brickies as they are also known do their job by laying bricks with mortar. If you have ever driven past a building site you will often see brickies in action.
This will depend on the look you're going for, if there are any requirements in the area you are building and what bricks are available. Keep in mind darker bricks can absorb more heat than lighter coloured bricks.
